Recipe of the week| Orach soup with egg and cream
The weekly baskets with organic vegetables from Grădina BIO also require a little bit of culinary creativity!
- 2 orach bundles
- 2 small carrots
- 1/2 small celery
- 2 egg yolks (or a tablespoon of butter for vegetarians)
- 2 tablespoons of sour cream
- 4 green onions
- 2 tablespoons of brown rice
- 2 tablespoons of lemon juice
- 1 bundle of lovage
- salt to your taste
Wash the orach and let it drain. Immediately after, clean the green onions, wash and finely chop then. Then, clean and wash the carrots and celery and grate them on a large grater. After finishing chopping the vegetables, sauté the onion, carrot and celery in 2-3 tablespoons of oil. Immediately, add 1 liter of boiled water.
Meanwhile, wash the rice well and add it to the pot. Add another liter of boiled water and let it cook for about 10 minutes.
Add the orach
In a bowl, mix the 2 egg yolks with the cream and vinegar. Add a ladleful of the juice from boiling the vegetables over the egg and cream mixture and mix well. It must be stirred continuously when pouring the cream sauce so that it does not coagulate.
