Kale chips are an addictively delicious snack food that is completely guilt free!! All of the ingredients are healthy and natural! It is the nutritional yeast that gives the cheesy flavor and at the same time is one of the best sources of vitamin B12 for vegetarians and vegans. Kale itself is loaded with nutrients, containing more easily accessible vitamin C and iron than any other vegetable. It is an easy way to get children to eat green leafy vegetables and once you try it, you will be hooked too!
Kale chips are also delicious without the fancy sauce! You can simply massage a bit of olive oil into the leaves and then place them on a baking tray with a sprinkle of salt, and slowly bake in the oven until they are crunchy – they should still retain a nice green color (if they start to brown, the oven temperature is too high).
Ingredients:
- 150 g cashew nuts
- 100 g red bell pepper
- 15 g nutritional yeast
- 4 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 tsp salt
- 1 tsp cayenne pepper
- water to get the right consistency – thick, but creamy – about 60-100 ml
Directions:
Blend all of the ingredients together (except the water) in a blender until smooth and creamy. Add water until you get the consistency of a cheese sauce. Prepare the kale by washing and drying it carefully, and then tear the leaves off of the stems, making sure to remove the tough spine. Pour the sauce over the kale and massage it into the leaves until they are well coated.
Place on an oiled baking tray and back at 135 C for about 25 minutes, taking care to flip the chips over half way through baking.
