This simple and luscious nettles soup is my favorite way to eat nettles. It is just pure nutrition!! So healthy, cleansing and delicious with few ingredients. I like to make the soup as a thick puree – it is a meal in itself – but adjust the liquid to the consistency you like best. The secret ingredient is the cream cheese….this really makes it so rich and velvety….Enjoy!!!!
Ingredients for 4 servings:
- 3 large potatoes, peeled
- 1 parsnip
- 500 g nettles (wash carefully with gloves to avoid the sting)
- 150 g cream cheese
- salt + pepper to taste
- 1/8 teaspoon of nutmegț
Add about 1 1/2 liters of water in a saucepan and bring to a boil. In the meantime, wash and peel the potatoes and parsnip and chop into big pieces. Add salt. Boil until starting to get soft, then add the nettles and cook a few more minutes until bright green and tender.
Remove from the heat and use an immersion blender to blend smooth, adding the cream cheese. Add pepper and nutmeg, adjust the salt to taste.
